Easter Sides Special – Scalloped Potatoes, Pineapple Stuffing, & Sweet Potato Casserole

I wanted to post something special for Easter, whether you celebrate or not, because it is one of my favorite holidays for food! This post will include 3 side dishes that I made with my mom to celebrate the holiday with my family today: Scalloped Potatoes, Pineapple Stuffing, and Sweet Potato Casserole. All three of these recipes have been my mom’s since I was a kid, so I’m excited to share them! These delicious recipes could be used for other holidays, or just as a great addition to an everyday dinner. 

Note: A lot of the ingredients overlap, so the prices will actually be lower if you decide to make all three recipes!

Scalloped Potatoes Ingredients (with prices & where I got the ingredients) 

  • 8 Large Potatoes → Walmart for $6.28
  • 5 ⅓ Tablespoons of Butter → Walmart for $3.96
  • 5 ⅓ Tablespoons of Flour → Walmart for $1.32
  • 2 ⅓ Teaspoons of Salt → Walmart for $0.76
  • 1 Yellow Onion → Walmart for $0.75 ($1.15/lb)
  • 3 ⅓ Cups of 2% Milk → Walmart for $1.86

Total cost for all ingredients (or about 8 servings ): $14.93

Total cost for one serving: $1.87

Scalloped Potatoes Instructions:

Prep

  1. Chop your onion into small, diced pieces.
  2. Peel your potatoes.
  3. Slice your potatoes into very thin slices.
  4. Preheat your oven to 375 degrees (Farenheit).

Making the Sauce

  1. Set the stove to medium heat.
  2. Melt the butter in a pot and stir in the flour, mixing well.
  3. Add the salt, onion, and milk, while continuing to stir and cook until the sauce thickens.
  4. Once the sauce has thickened, remove from heat. 

Cooking the Potatoes

  1. Grease a baking dish. 
  2. Starting with your sauce at the bottom, place alternating layers of potatoes and sauce until your dish is full. 
  3. Put your baking dish in the oven for 2 hours (375 degrees).
  4. Take the dish out of the oven and serve!

Pineapple Stuffing Ingredients (with prices & where I got the ingredients) 

  • 1 Cup of Margarine/Butter → Walmart for $3.96
  • 2 Cups of White Sugar → Walmart for $3.96
  • 4 Eggs → Walmart for $2.57
  • ¼ Cup of 2% Milk → Walmart for $1.86
  • 4 Cups of White Bread Cubed or Torn Apart → Walmart for $1.42
  • 1 20 oz. Can of Crushed Pineapple → Walmart for $1.97

Total cost for all ingredients (or about 8 servings ): $15.74

Total cost for one serving: $1.97

Pineapple Stuffing Instructions:

Prep

  1. Cut or tear your bread into even cubes, around 1.5 inches on each side.
  2. Beat together your 4 eggs until they are all combined.
  3. Beat together the margarine, sugar, and eggs.
  4. Mix in the pineapple, milk and bread cubes.
  5. Stir until all the ingredients are combined evenly.
  6. Preheat your oven to 375 degrees (Farenheit).

Cooking the Dish

  1. Butter a casserole dish, making sure all sides are covered. 
  2. Add in your pineapple stuffing mixture and ensure it is evenly spread in the baking dish.
    1. Make sure to leave room at the top of the baking dish, as the pineapple stuffing tends to bubble up a bit, and may spill over if the dish is too full.
  3. Bake at 375 degrees for 15 minutes.
  4. Turn the oven down to 350 degrees, and bake for an additional 1 hour. 
  5. Remove from the oven and serve!

Sweet Potato Casserole Ingredients (with prices & where I got the ingredients) 

Casserole Filling:

  • 1 Large Can of Sweet Potatoes/Yams → Walmart for $2.96
  • 2 Cups of White Sugar → Walmart for $3.46
  • 4 Eggs → Walmart for $2.57
  • ¾ Cup of Margarine/Butter → Walmart for $3.96
  • ¾ Cup of 2% Milk → Walmart for $1.86
  • 1 Teaspoon of Ground Nutmeg → Walmart for $2.42
  • 1 Teaspoon of Ground Cinnamon → Walmart for $1.24
  • 2 Cups of Miniature Marshmallows → Walmart for $1.17

Casserole Topping:

  • 1 ½ Cups of Corn Flakes → Walmart for $2.24
  • ½ Cup of Packed Brown Sugar → Walmart for $2.22
  • ¾ Cup of Margarine/Butter → Walmart for $3.96

Total cost for all ingredients (or about 8 servings ): $28.06

Total cost for one serving: $3.51

Sweet Potato Casserole Instructions:

Mixing Together the Casserole (no topping)

  1. Preheat the oven to 400 degrees (Farenheit).
  2. Drain the canned sweet potatoes/yams.
  3. Beat together the 4 eggs until fully combined. 
  4. In a large bowl, mix together the canned sweet potatoes/yams, white sugar, beaten eggs, ¾ cup of margarine, milk, nutmeg, cinnamon, and marshmallows. 
  5. Coat a baking dish with butter, ensuring all sides are covered.
  6. Scoop the mixture into the baking dish, spreading it evenly.

Cooking the Casserole

  1. Bake the casserole for 20 minutes in the preheated oven. 

Preparing the Topping and Finishing the Casserole

  1. Crush the Corn Flakes into small pieces. 
  2. Mix the brown sugar and ¾ cup of margarine into the crushed Corn Flakes until everything is evenly combined.
  3. Take the casserole out of the oven after 20 minutes, and spread the topping evenly over the top of the baked sweet potato casserole.
  4. Put the casserole, with the topping on it, back into the oven for another 10 minutes at 400 degrees. 
  5. Remove the casserole from the oven and serve!
